Norbixin is a water-soluble food colour. Commercial forms contain mixtures of isomers and their methyl esters. Norbixin is used to colour butter, margarine and other fat-related products. Upon exposure to alkali, the bixins methyl ester is hydrolyzed to produce the dicarboxylic acid norbixin, a water-soluble derivative. Bixin is an apocarotenoid found in annatto, a natural food coloring obtained from the seeds of the achiote tree (Bixa orellana). (Wikipedia
