Lycopene is an acyclic carotene commonly obtained from tomatoes and other red fruits. It has a role as an antioxidant and a plant metabolite. It contains a carotenoid psi-end derivative. Lycopene is a naturally occuring red carotenoid pigment that is responsible in red to pink colors seen in tomatoes, pink grapefruit, and other foods. Lycopene, also known as all-trans-lycopene or e160d, is a member of the class of compounds known as carotenes. Carotenes are a type of unsaturated hydrocarbons containing eight consecutive isoprene units. They are characterized by the presence of two end-groups (mostly cyclohexene rings, but also cyclopentene rings or acyclic groups) linked by a long branched alkyl chain. Carotenes belonging form a subgroup of the carotenoids family. Thus, lycopene is considered to be an isoprenoid lipid molecule. Lycopene can be found in a number of food items such as american butterfish, babassu palm, scup, and condensed milk, which makes lycopene a potential biomarker for the consumption of these food products.
