Very long-chain fatty acids are fatty acids with an aliphatic tail that contains at least 22 carbon atoms. Thus, phellogenic acid is considered to be a fatty acid lipid molecule. Phellogenic acid is practically insoluble (in water) and a weakly acidic compound (based on its pKa). Phellogenic acid can be found in potato, which makes phellogenic acid a potential biomarker for the consumption of this food product.
