Quercetin 3-gentiobioside is slightly soluble (in water) and a very weakly acidic compound (based on its pKa). Quercetin 3-gentiobioside can be found in guava, opium poppy, and soy bean, which makes quercetin 3-gentiobioside a potential biomarker for the consumption of these food products. Quercetin 3-gentiobioside is isolated from A. iwayomogi, AR and AGE formation inhibitor, demonstrates biological activities against Aldose reductase (AR) and the formation of advanced glycation endproducts (AGEs)[1].
