Ethyl phenylacetate, also known as ethyl alpha -toluate or ethyl benzeneacetate, belongs to the class of organic compounds known as benzene and substituted derivatives. These are aromatic compounds containing one monocyclic ring system consisting of benzene. Ethyl phenylacetate is a sweet, anise, and balsam tasting compound. Ethyl phenylacetate is found, on average, in the highest concentration within corns. Ethyl phenylacetate has also been detected, but not quantified, in several different foods, such as citrus, pulses, german camomiles, alcoholic beverages, and cereals and cereal products.
Ethyl phenylacetate is an odoriferous constituent of many plants. It is found in many foods, some of which are apple, grapefruit, guava fruit, papaya, melon, pineapple, wheat bread, crispbread, wines, fruit brandies, shoyu, bael (Aegle marmelos), sake, and ceriman (Monstera deliciosa). It can be used as a flavouring ingredient.
