Hederagenin is a member of the class of compounds known as triterpenoids. Triterpenoids are terpene molecules containing six isoprene units. Hederagenin is practically insoluble (in water) and a weakly acidic compound (based on its pKa). Hederagenin can be found in a number of food items such as rye, dill, european cranberry, and black salsify, which makes hederagenin a potential biomarker for the consumption of these food products. Hederagenin is the aglycone part of numerous saponins found in Hedera helix (common ivy). The most prevalent of these being hederacoside C and alpha-hederin. It is also one of three primary triterpenoids extracted from the Chenopodium quinoa plant categorized by the EPA as a biopesticide.
