Skimmin is a member of the class of compounds known as coumarin glycosides. Coumarin glycosides are aromatic compounds containing a carbohydrate moiety glycosidically bound to a coumarin moiety. Skimmin is soluble (in water) and a very weakly acidic compound (based on its pKa). Skimmin can be found in sweet potato, which makes skimmin a potential biomarker for the consumption of this food product. Skimmin is a glucoside of umbelliferone .
